Cookie Dough Brownies

Ever felt like a chewy, warm brownie to snack on? Well, with this recipe you can make one of the best cookie dough brownies around! It's simple, beginner-friendly, and will be ready in only an hour!
Ingredients:
For The Cookie Dough Batter:
• 100g Unsalted butter, softened
• 125g Light brown sugar
• 1 Egg yolk
• 1 tsp Vanilla
• 110g Plain flour
• 1/2 tsp Baking powder
• 75g Chocolate chips
+ extra chocolate chips for topping!
For The Brownie Batter:
• 170g Unsalted butter, melted
• 250g Caster sugar
• 2 Large eggs
• 125g Dark chocolate, melted & cooled slightly
• 100g Plain flour
• 30g Cocoa powder
• 1 tsp Salt
• 80g Chocolate chips
Steps:
To prepare, preheat the oven to 190°C and line an 8x8 tin pan with parchment paper.
Then, in a large mixing bowl, cream together 100g softened butter, and 125g light brown sugar to form a paste. (Pro tip, use a wooden spoon!)
Mix in 1 egg yolk and 2 tsp vanilla until combined.
Next, sift in 110g plain flour and ½ tsp baking powder until the dough appears smooth and uniform.
Lastly, fold in about 75g (about ⅓ cup) chocolate chips, and set mixture aside to chill in the refrigerator.
Moving on to the brownie mix,
Whisk together 170g of melted butter and 250g caster sugar. Preferably using an electric whisk.
Then add in 2 large eggs and continue whisking until thick and fluffy.
Slowly mix in 125g melted dark chocolate, 30g cocoa powder, 1 tsp salt and 1000g plain flour.
Lastly fold in 80g chocolate chips. And pour mixture into your lined tin.
Then retrieve your cookie dough mix and roll dough into small balls and flatten them into the top of the brownie mix. (Keep in mind that the cookie dough will spread!)
Sprinkle some more chocolate chips over the top!
Bake in the oven for 30 minutes or until the cookie dough is lightly golden, the edges of the brownie are cracked. Let the brownie cool, cut into squares, and enjoy!
