Snowball Cookies

Snowball cookies- often referred to as “Mexican Wedding Cookies”,  are chewy, melty, and everything you need in a Christmas cookie. Here is the perfect recipe for classic snowball cookies:

Ingredients:

  • 2 cups flour 

  • 1/2 cup finely chopped walnuts or almonds or pecans

  • 1 cup butter or coconut oil

  • 1/2 cup powdered sugar or sugar-free powdered sugar

  • (Optional) Additional powdered sugar or cocoa powder, for rolling.


Steps:

  1. Preheat the oven to 325 degrees. 

  2. Combine the butter with the powdered sugar in a medium bowl or a stand mixer and beat until smooth. 

  3. Stir together the flour and nuts in a separate bowl. 

  4. Then mix all ingredients to form a dough. 

  5. Shape into balls, place on a cookie sheet, and bake for 20 to 25 minutes until lightly browned. 

  6. Have an extra bowl of powdered sugar ready, and roll the warm cookies in it to coat. 

  7. Cool on a wire rack.
